Cauliflower Kale Soup



This hearty and healthy soup is made with aromatic spices and the healthy foods cauliflower and kale. It makes a bowl that is deliciously creamy and full of flavor.

Ingredients:

  • 1 medium cauliflower, chopped
  • 2 cups kale, stems removed and chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

In a large pot, heat olive oil over medium heat

Saut onions and garlic until softened and fragrant

Add cauliflower, kale, turmeric, and cumin

Cook for 5 minutes

Pour in vegetable broth and coconut milk

Bring to a boil

Reduce heat, cover, and simmer for 20-25 minutes until vegetables are tender

Use an immersion blender to puree the soup until smooth

Season with salt and pepper to taste

Simmer for an additional 5 minutes

Serve hot, garnished with fresh parsley
