Ingredients:
- 1 medium cauliflower, chopped
- 2 cups kale, stems removed and chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil
- 1 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Saut onions and garlic until softened and fragrant
Add cauliflower, kale, turmeric, and cumin
Cook for 5 minutes
Pour in vegetable broth and coconut milk
